As a Realtor I have seen a lot of kitchens. At this point in my career, it's probably in the thousands and I can say, I have seen some really poorly designed kitchens. However, I have seen some really great and thoughtfully planed kitchens too!
Remodeling a kitchen is not just about picking out cabinets, tile, and countertops, it's about having a functional kitchen that works. It is about sticking with what works. That being said, ignoring the kitchen triangle. What is that you ask? It's the sink, refrigerator, and the stove. If you cannot afford opening the kitchen to give room for the refrigerator, do not just stick it in the closet space next to the kitchen (yes, I have seen this) work with what you have, or wait until you can afford to do right.
Improper planning can cost you money in the end. As my mother use to say "cheap is expensive". No truer words were ever said!
